Tortilla Vegie Melts

A tasty meal to throw together to use leftover vegies. It makes a great lunch, dinner or even a snack. You can use different vegies to your liking. This recipe is for 2 melts, but you can adjust for more servings.

  • add   1/2 teaspoon worcestershire sauce (Use vegetarian version to make this recipe suitable for vegetarians.)
  • add   1 cup shredded lettuce
  • add   1 cup shredded cheddar cheese (or any kind you like)
  • add   1 teaspoon italian seasoning
  • add   2 teaspoons olive oil
  • add   1 medium shredded carrot
  • add   salt and pepper
  • add   1 teaspoon garlic powder
  • add   1 small onion
  • add   1 small tomato
  • add   2 wheat flour tortillas

Instructions

  1. -Heat olive oil in skillet over med/high heat.
  2. -Add carrot, onion,tomato, garlic powder, italian seasoning, worcestershire sauce and salt-n-pepper to taste.Cook until onion is almost translucent, then add lettuce.
  3. -Steam, warm tortillas in the microwave, or just have at room temperature.
  4. -Keep stirring, and when vegetables are tender, divide into two equal portions, and place shredded cheese over each portion.
  5. -Get warm plate ready with tortillas.
  6. -When cheese is melted over vegies, use spatula and lift each half portion in middle of tortilla.
  7. -Fold sandwich as you wish and enjoy!
